I was curious about Platten wheels. I see everyone using aluminum wheels (2"). Would it not be better to maybe use a 2" contact wheel and a 3" contact wheel so one can have more diversity? Then have your small wheel attachment and then maybe a 7 inch and a 10 or 12 inch contact wheel?

There is no right or wrong way in this regard. There are plenty of options available to you. Some designs include a rotating platen wheel which has a number of other wheel sizes on it. This provides the flexibility you're talking about.

I'd like a platen/contact wheel option. I've seen the Caffrey Platen (https://www.caffreyknives.net/grinder_platen.html) and like the idea of having a smaller radius rubber contact wheel. It would be simple enough to fabricate. The wheels are not as common as plain old alum ones though.
